You must have prepared some delicious & gorgeous cakes during Christmas. I feel really bad that I do not own any baking device or micro oven 😦 This is one of my resolution for the upcoming year – to buy a micro oven and hone my baking skills 😀
I did not at all want to miss the opportunity to bake my own cake for Christmas 😀 Its a different level of satisfaction to enjoy a freshly baked home made cake instead of buying one from the store. I went to my parent’s place and borrowed their micro oven 🙂 Now my parents do not like any type of icing on cakes. So I prepared an easy Fruit Cake and decided to share with you in case you are in the same situation like me.
You do not need to have great baking skills for this. Also the ingredients are easily available. You can surely add / modify the ingredients as per your liking. For example, instead of murabba you can use pineapple cubes, instead of orange juice you can use any fruit juice of your choice.
Lets get started !!
Preparation Time : 15 minutes
Take 1 cup of sugar and grind it to powder form using a mixer grinder.
Warm 1 cup milk and keep it in a bowl
Melt 2 tablespoon butter in a small bowl.
Extract juice from 1 orange in case you are not using ready made orange juice.
Finely chop almonds, pistachio, cashew nuts, raisins and walnuts (about 3 tablespoon) which you will use in the cake batter.
Chop Murabba / Pineapple into small cubes (1/2 cup).
Cut each of 6 cherries into half.
You will need 1 medium sized bowl to mix the dry ingredients and another large mixing bowl to prepare the cake batter. You will also need a Hand Blender or Kitchen Aid. For baking you need a baking container of any shape you prefer (I choose a floral design) and baking paper.
Keep everything near your reach before starting.
Baking Time : 30 minutes
- All purpose flour – 2 cups
- Powdered Sugar – 1 cup
- Cinnamon powder – 1 teaspoon
- Melted Butter – 2 tablespoon
- Vanilla Essence – 1 teaspoon
- Baking Powder – 1 and 1/2 teaspoon
- Eggs – 2
- Salt – 1/2 teaspoon
- Full Fat Milk – 1 cup
- Orange Juice – 4 tablespoon
- Tutti Frutti – 2 tablespoon (I have used only red ones, you can use multi colored or any color of your choice)
- Mixed dry fruits – 3 tablespoon, finely chop almonds, pistachio, cashew nuts, raisins and walnuts
- Murabba – 1/2 cup, chop Murabbas into 2 inch cubes (You can use Pineapple cubes instead of this if you prefer)
- Cherry – 5 to 6, each cut into 1/2 horizontally (garnishing)
- Whole Dry Fruits – 8 almonds, 8 cashew nuts and 8 raisins (garnishing)
- Refined Oil – few drops (to grease the baking container)
Take a medium sized bowl. Add all purpose flour, powdered sugar, cinnamon powder, baking powder and salt. Mix well.
Now take a large mixing bowl. Break the eggs and add the contents. Add orange juice, melted butter, vanilla essence, milk. Mix everything very well till you get a smooth frothy texture using a hang blender / KitchenAid.
Slowly mix the dry ingredients into the mixing bowl. Keep blending as you add so that there are no lumps formed. Once you have added the whole dry ingredients into the mixing bowl, use the hand blender at its maximum speed to prepare a smooth batter.
Now keep aside the hand blender / KitchenAid. Add chopped murabba, mixed dry fruits and tutti frutti. Use a egg beater to whisk the batter so that everything is mixed well. (Do not use KitchenAid / hand blender in this step).
The cake batter is now ready.
Turn on your micro oven. Let it Preheat at 180 degrees.
In the meantime, brush all sides of the baking container well with refined oil. Next place a greasy baking paper (this is optional, but it further prevents the cake from sticking to the container).
Pour the cake batter evenly into the baking container. See to it that murabba, dry fuits and tutti frutti are evenly distributed in the cake batter.
Decorate the cake with cherry, almonds, cashew nuts and raisins.
When the oven is preheated, place the baking container carefully inside the oven. Set the temperature to 180 degrees and time to 30 minutes. My cake was completely done in 30 minutes. But please insert a toothpick and see if it comes out clean for your cake. If not, you may need to bake it longer.
When the tooth pick comes out clean, your cake is completely done and you can turn off the oven.
Do not try to get the cake out of the container / cut the cake into slices immediately after you have taken it out of the oven.
Let it cool down completely (I let it cool overnight). This is how the finished cake looks 🙂
You can cut the cake into slices and enjoy with your breakfast tea / any hot drink.
